My version of “Huevos Rancheros”

My way of coping amidst this panic of Covid 19 is by cooking. It helps me calm down and release my stress.

This morning I decided on cooking a big breakfast. The thing about Huevos Rancheros is that it is a Mexican dish rich in protein from the beans and the eggs. You may skip the yolk and even make the eggs with simply egg whites if you like.

This recipe is simple yet a bit time consuming in terms of the number of ingredients and plating or layering involved. If you want to make it quick you may skip few ingredients as per your liking.

Ingredients:

Eggs -1

Onion- 1 medium chopped fine

Garlic cloves- 4-5

Habanero lime tortillas from Trader Joes (you may use any brand tortillas or any kind)

1 Can of black beans

1 jalapeno diced

Cheddar Cheese or any mexican cheese blend

Salt to taste

1 avocado sliced

Sour Cream

Salsa -either homemade or any store bought (I use Ghost pepper or Habanero salsa because our family loves spice)

Butter or oil

Cilantro for garnish

Preparation:

Take a pan and place over medium heat, add 1 tsp oil, garlic cloves, onions and black beans along with salt and saute for about 5-10 minutes. Then take another pan and make half fry eggs over medium flame. Toast the tortillas in medium flame and I add some cheddar cheese over the toasted tortilla while its warm so the cheese melts over it.

  1. Take a plate -place the toasted tortilla with cheese
  2. Tranfer 2-3 spoons of the beans with onion and garlic on top of the tortilla
  3. Place the half fried egg over
  4. Add some salsa
  5. Add a dollop of sour cream or more as per your liking
  6. Add sliced avocados
  7. Add jalapenos if you like the crunch and spice
  8. Garnish with cilantro

Layering or Plating:

Tip: I always try to make the yolk runny since that elevates the quality of the dish so much.

We try and eat healthy for the most part but we are all human:) and love to sink into those delicious goodness of carbs once in a while!

I make a dish which my whole family loves and await for me to finish cooking so they can dig in. Its very popularly called as “Chaat” in India. Its a dish which you find in the streets of Mumbai popularly and I am going to share an easy recipe today with you. ALOO TIKKI CHOLE CHAAT means Potato patties with chickpeas in a curry sauce along with some tamarind sauce and cilantro chutney with chopped up onions as garnish! You may squeeze some lemon for acidity if you like.

Ingredients:

For the potato patties:

Potatoes- 3/4 medium cooked by boiling or steaming peeled

Spices: 1/2 tsp lemon pepper, garlic, cayenne, cumin,

For Chickpea Curry :

Chickpeas – 1 can

Onions-1, Tomatoes -1, chopped up garlic ginger, 2 cloves, 1/4 tsp of cinnamon powder, 2 cardamoms,

Coconut or any oil

Salt to taste

Cayenne as per spice level

Preparation:

I usually like to boil my potatoes first and peel them and transfer to a bowl which has all the above mentioned spices to make the patties with salt and cayenne in it. I then mash up the potatoes with all the spices until dough like consistency. Then I cover it with a damp paper towel and stick it in the fridge for atleast 3-4 hours.

Now while the potato mix is inside the fridge, I prepare my chick pea or chana curry. You may use canned chickpeas for this. (I soak mine overnight and cook it in a pressure cooker until 3-4 whistles).

Take a pan and add 1-2 tsp of coconut oil over medium flame. Add chopped garlic, onions and saute with all the spices mentioned above for the chickpea curry along with salt and cayenne for about 5 minutes. Now transfer the tomatoes and add 1/4 cup water and cook covered for 5 minutes as well. Add the canned chickpeas and mix well and let it cook for another 5 -10 minutes.

Once this is done, take out a pan and add 2 tsp coconut oil over medium flame. Now is the time i take out my bowl with the potato mix from the fridge and add rice flour. The main reason to adding rice flour is to get perfectly crispy surface. Quick tip- I usually oil palm of my hand and make patties so they dont stick to my hands and slide it on the pan and cook them till the surface is golden brown.

Final step is Plating. If using a bowl, add chickpea curry first, then the patties on top then if available store bought tamarind and cilantro sauce. For garnish – add finely chopped onions for crunch, some green chilis and cilantro leaves.

This dish is pure bliss!

Khow suey, is a noodle soup made of egg noodles and curried beef or chicken with coconut milk, served with a variety of contrasting condiments.

I have tried to make a vegetarian version with no meat but eggs is optional. Our family loves eggs so I always think thats a nice addition. You may also add tofu for protein.

A squeeze of lemon also adds tanginess to khow suey. The dish is similar to the Burmese noodle dish- ohn no khauk swe, literally ‘coconut milk noodles’.

One of most comforting soups I have ever come across is a coconut based broth with aromatics of Galangal, Lemon Grass and Thai basil- Yes you guessed it right – a thai curry.

I love the green and red curry during the monsoon months or while gazing through the window looking at each snow fall off the ground and stick.

I have the long version of recipe which involves making the curry paste from scratch but in this day of fast life -I found an excellent product which cuts down the prep time to less than 20 minutes and I am going to share the secret with you all.

Here goes:

Ingredients:

Vegetables chopped – beans, carrots, cauliflower, sweet peas

Tofu- Optional

Coconut Milk- 1 can

My magic ingredient- MAESRI RED CURRY PASTE

Salt to taste

Onion- One large

Garli cloves- 4/5

Coconut oil or any oil- 2 tsp

Green Chili- 2 depending on spice level you may even skip

Preparation:

Place a pan over medium heat. Add 2 tsp of coconut oil. Transfer chopped garlic, green chilis and onions and saute for 5 min’s. Then add your chopped mixed assorted veggies and saute for about 10 minutes covered with 1/4 cup water. I throw in whatever I may find in my refrigerator so you can play with this dish a lot. Meat lovers can throw in chicken pieces too.

I sometimes like to add some tofu for protein. Now add my magic product Maesri red curry paste to the dish and mix well. Once all the veggies are coated with the paste, lower the flame and add in the can of coconut milk slowly and let it cook till it comes to a slow boil.

Garnish with Cilantro or thai basil. You may serve with brown or white rice or drink it up as a soup! Voila!

As Covid -19 strikes us, we all have to find ways to cope with stress and anxiety. I personally choose to keep myself informed but at the same time choose to channel my energy to cooking some delicious dishes for my family.  

Last night we all were craving for some Indian Street Food otherwise famously known as “Pav bhaji” or Vegetarian Sloppy Joes . The best thing about this dish is that you can throw in so many veggies in it yet this dish turns out to be delicious and well loved by my kids which is a rarity.

Here goes the recipe: 

Ingredients

Ginger- 1/2 an inch

Garlic- 6 cloves

Onion- 1 large

Tomatoes- 2 medium

Cayenne or Chilli powder- 2-3 tsp

Lemon- 1/2

Curry powder- 2 tsp

Cumin seeds- 1/2 tsp

Salt to taste

Butter- 1/4 stick

Coconut oil

1/2 head of cauliflower

Peas-1/4 cup

Potatoes- 1

Carrot-1

Preparation

Firstly chop up cauliflower, potato, carrot and sweet peas in a pressure cooker or instant pot and cook all your veggies separately with salt. Next, take a pan, add some butter and throw in cumin seeds, ginger, garlic, onions, salt to taste and saute for 5 minutes till onions turn golden brown. Now add chopped tomatoes. Mix well with curry powder or garam masala as well as cayenne powder (depending on each family s spice level tolerance) and keep covered till it turns into a nice onion tomato paste. Now take the cooked veggies and transfer it to the onion tomato paste and mash it well till it turns creamy.

For garnish I chop up some cilantro, chopped onions and Serrano chilies.

You may serve with buns or bread.
