One of my favorite soups growing up was Asparagus soup. Growing up in India, Asparagus soup was only served in one upscale restaurant in town and so I had to earn my trip to that restaurant to order it.
When I moved to the US several years back, I was so happy and surprised that Asparagus was so easily available in the markets. Thus began my journey of making Asparagus soup at home.
Again, a very easy quick meal that you can whip up for the family.
Ingredients:
Asparagus- a bunch chopped up till the ends (where the hard part begins- discard the hard ends)
Garlic cloves-5
1/4 cup of sweet peas
1 large onion chopped roughly
Turmeric powder- 1 tsp
Cayenne powder depending on spice level
Salt to taste
Vegetable Broth or Water- 1/2 cup
Any oil
1 Tsp of sunflower seeds for garnish.
Preparation:
Place a pot under medium flame. Add oil, then garlic, chopped up onions and Asparagus and saute for 5 minutes.
Add salt to taste, turmeric powder, and cayenne depending on your spice level.
Add 1/4 cup sweet peas and mix well. Sweet Peas offers a very green and sweet flavor to the dish. I add sweet peas to keep the green color as opposed to blanching.
Add 1/2 cup of vegetable broth or water. Keep covered and cook for about 2-3 minutes .
Now transfer the contents to a blender and blend it to a smooth consistency.
Garnish with sunflower seeds.

1/2 cup Yellow Pigeon peas or Red Lentils
1 large Onion
1 Tomato
Fresh Ginger
3 cloves of Garlic
Pinch of Turmeric
Salt to taste
Cayenne
1 teaspoon Lemon Pepper
1 teaspoon Coriander powder
Canola Oil/ Vegetable Oil
1 teaspoon Cumin seeds
Cilantro for garnish
2 teaspoons Lemon Juice
Take 1/2 cup of Yellow Pigeon peas (you can also use Red Lentils) in a pot on a gas and add 1 cup water and keep covered till it cooks completely.You will know the lentils are cooked thoroughly once they turn mushy. Add salt to taste. Keep them aside.
Chop ginger,garlic and onions finely. Then heat a pan, add 2 teaspoons of ghee or clarified butter. Transfer the chopped onion, ginger and garlic to the pan. Also, add pinch of turmeric and cayenne, salt to taste, 1 teaspoon lemon pepper powder and saute well till the onions are caramelized. Then chop a tomato and add it to the pan. Sprinkle some water and keep covered till the chopped tomato cooks well and takes in all the flavors from the spices. This is called a “TARKA” in Indian Cuisine and adds richness to the humble dal which we cooked earlier. Once onion tomato ginger garlic paste is cooked and ready, add the “TARKA” to the cooked lentils. I like to use a hand blender and blend it a little so you can still see bits of caramelized onions and tomatoes. Squeeze some fresh lemon juice or add 2 teaspoons of lemon juice. Chop some cilantro leaves and use to garnish as well. Enjoy!

Dal makhani or dal makhni is a dish originating from the northern region of the Indian subcontinent. The primary ingredients are whole black lentil, red kidney beans, butter and cream. This dish is a one pot slow cooked dish which will taste better as you let it cook for longer. In India, we cook this for hours and sometimes overnight in a claypot in charcoal flame to get the perfect smoky well stewed Lentils or Dal.
I have substituted butter and cream with low fat milk and coconut oil. So mine is a healthier version of “Dal Makhani”.
The other ingredients used are ginger, garlic, onions, tomatoes and special bunch of Indian spices used for this dish which is cooked for hours to attain the perfect smoky soupy consistency and taste.

HEALTHY ROASTED FENNEL SOUP BY CURRYLICIOUSME
Recently I went to this restaurant which had some awesome Italian dishes of which their Roasted Fennel Soup blew me away! The soup was delicious and I made up my mind to recreate that dish excepting I did not want to use potatoes. The roasted fennel soup in the restaurant had potatoes which according to their Chef helps make the dish thicker in consistency and creamier.
I tried to recreate the same soup at home minus the potatoes 🙂 I would love to share this extremely delicious yet healthy dish with all of you today.
Ingredients
1 medium Fennel bulb with fronds
1 medium Onion4 garlic cloves
1 tsp lemon pepper powder
1 tsp garlic powder
1 tsp cayenne
2 tablespoon milk
1/4 cup vegetable broth
salt to taste
Preparation:
1) Take a baking pan and cover it with aluminum foil to avoid messy clean ups:) The first step is to chop the fennel bulb.
How to chop the fennel bulb?
Chop the fronds or the tiny spikey leaves off the fennel bulb. DO NOT THROW away the fronds as it is very flavorful and can be used as a pretty garnish for the soup.


Take off the outer layer or leaf from the fennel bulb and then cut in half. Similar to onions, fennel also have a core at the bottom that has to be removed carefully using a knife. I usually cut a V shape around the core and dice it out.

Now wash the rest of the fennel and chop evenly into small uniform pieces. Transfer the chopped fennel pieces to the baking pan covered with foil.
2) Dice a medium Onion evenly and transfer to the pan with chopped fennel pieces.
3) Chop garlic finely and transfer to the pan with chopped onion and fennel pieces.
4) Drizzle olive oil along with salt, cayenne, lemon pepper and garlic powder and toss to mix well.
5) Stick the baking pan in the oven at 360 F for about 45 minutes.
6) Once done, take it out of the oven, let cool and transfer to a food processor or blender.
7) Blend the pieces of baked and chopped fennel, onion and garlic along with vegetable broth.

8) Transfer the blended mixture to a pot and check seasoning and add 2 tablespoon of milk (to add creaminess to the texture) and wait till it boils.
9) Your roasted fennel soup is ready and you may garnish it with the fennel fronds.

Growing up in a small city called Cochin in the southern part of India -Kerala, this spicy lentil soup that my grandmom and mom made filled the house with fragrance of freshly ground spices. This soup is called”Sambhar” in Kerala and is made a little differently than the regular “Sambhar”. My mom and grandmom freshly ground all the spices needed to make this dish and sauted them with coconut and blended them to form a thick paste. The veggies are chopped and thrown in water till they cook, then lentils added, and for acidity/ tang- (this is the good part) we added some fresh tamarind juice!!! Finally I use a tad bit of clarified butter with mustard seeds to garnish this bowl of heaven!!!unlike my mom/grandmom who just poured ghee or clarified butter like noone’s business:)
I would also like to mention that we were raised very religious and spiritual and so today is a function that we celebrate amongst a caste of people known as Brahmins in India. Caste system prevails in India and there are both good and bad sides to it. I try to look at the good side and say that India is rich in culture because of its diversity and castes and I do not believe that it divides us but that it brings us together. I have learnt to respect other cultures/ castes growing up! So today is a day known as “Avani Avittam” which is an important ritual associated with the Brahmin community in the world. All Brahmins , the men wear a sacred thread through the year and on the day of Avani Avittam, the sacred thread worn is changed and it is usually a community observance and takes place on the banks of a pond or river. Avani is the name of the Tamil month and Avittam is one of the 27 stars.
My mom and grandmom always cooked delicious authentic meals and “Sambhar” on this special day and this was one dish that we all enjoyed !!
Thinking of my family on this special day when I cooked this delicious “Sambhar” dish. It can be served with rice or just drink it up!!!!
