Cold Beet Salad with Goat Cheese & Sunflower seeds

I must say that this is one of the best way and form I have consumed beets! My daughter ate a whole bowl of this salad so for all those moms

struggling to get all the good stuff with nutrients in your child, this might be a dish you wanna try! Beets belong to root vegetable family and are super rich in antioxidants and nutrients.

This dish took me less than 2 minutes to plate once the beets were cooked. Cooking beets takes a while but trust me this dish is so worth it!

Ingredients:(Serving Size for 2)

Beets- 2 or 3 beets

Goat cheese crumbled- 1/4 cup

Sunflower seeds- 1/4 cup

Red Onion- 1/2

Olive Oil

Salt to taste

Preparation:

 

Cooking the beets: There are 2 ways to cook the beets. You can peel the skin dice them evenly and roast it in the oven at 375 degrees for 45 minutes.

or

You can use a pressure cooker. I love cooking a lot of my veggies in my cooker since its faster and cooks evenly. Peel the skin of the beets, dice the beets evenly and transfer them to a container with water. Cook the beets in a cooker. It takes me about 15- 20 minutes to cook them in a pressure cooker.

I transfer the cooked beets in a bowl and add the crumbled goat cheese and mix it up. Then I add salt to taste, drizzle some olive oil and leave it in the refrigerator for about 10 minutes. Prior to serving, mix some sunflower seeds and serve as a cold salad.

Absolutely healthy and delicious meal!

Kids Cooking Sessions this summer- Cooking camp!

Hello everyone
Having received a tremendous response from cooking workshop for kids last summer, I will be conducting a Kids Cooking Camp this summer as well and wanted to reach out to all of you who are planning camps for your kids. I have seen that the kids enjoy these cooking sessions so much because they are allowed to get messy and get to make their own plate of food in a fun way.

I have planned 2 weeks of cooking camp for the kids this summer. I am conducting
one week of cooking session for the kids in July from July 12 th through July 16th, Mon-Fri, 9:30 am- 12:00pm and the kids get to eat lunch at the end of each session.
I am also conducting another cooking session in August from Aug 12th through Aug 16th, Mon- Fri, 9:30 a- 12:00pm.
I have kept the menus for both the camps different so parents who want their kids to attend both sessions may do so.

Williams Sonoma Cooking Demo on 23rd March,1-4pm

As promised, I am posting some pics from my  cooking demonstration at Williams Sonoma in Short Hills Mall, NJ on March 23rd. It was a lot of fun and

like always I had a wonderful audience. This time, I must confess that I had this one lady who came up to me and asked me how I could stay vegetarian for so long? and

if I missed eating meat? I said to her ” Not really since I love to cook with veggies and put a ton of flavor in it and share my secrets with everyone:)”

She was so thrilled she sat in a chair and watched me as I cooked away my dish. She had a pen and a book and was making a note of whatever I said.

So the dish I made was an Eggplant Tapanade with cilantro chutney served on a cracker. Lot of people walked in tried my dish and appreciated the flavors!

It was a truly memorable experience since the manager of the store at Williams Sonoma, Short Hills walked up to me, ate my dish and said to me” There was this lady who walked up to me and said that you did a great job answering all her questions, she loved your dish and thought it was great. That must mean a lot  to you”.

And yes it did, I was so happy to merely listen to something like that and would consider myself lucky and all my efforts seemed to have paid off. This is the most rewarding job that I ever had – not in terms of money but in terms of happiness and appreciation! Nothing can beat this:)

Cooking with 10 year old Anaya on her Birthday

I have been postponing this post now for a long time simply because I wanted to sit down and write about this wonderful cooking experience with a 10 year old girl, Anaya.

Anaya is such a sweet, brilliant, creative 10 year old who loves to cook. On her 10 th birthday, her mom Shruti decided to host a birthday party where Cooking was the theme. Anaya was thrilled with her mom s idea and decided that she wanted to throw a party by cooking a meal for a bunch of her close friends at her home.


Shruti had found me on Facebook through one of our common friends and decided to call me to help Anaya prepare this wonderful meal for her friends. I was super excited, immediately got working on what Anaya and her friends liked to eat and what they didn’t care too much for and so forth.
I exchanged a couple of emails with Shruti, Anaya s mom who in turn checked with her daughter to see if all of us were in agreement:)
So here goes the menu:

For Appetizers, we decided to make
Paneer or Indian Cottage Cheese Quesadillas.

For the dip, we made fresh Guacamole with Onions and tomatoes and a hint of lemon juice!yum!

For Main course,

Penne pasta with broccoli and peppers in a Pink sauce.

Shruti also mentioned that Anaya loved mangoes so I decided to whip up a

Mango Smoothie with a wedge of strawberry!

We took about 2 hours to prepare everything. Anaya wore her apron and chef hat and looked like a Junior Master Chef:) in the kitchen. She loved to chop and sauté and mix and did such a wonderful job.

I am pretty sure she will be a great food critic when she grows up as she aspires to be one:)

What can I say? Anaya was thrilled to serve her friends with all the food that we cooked together and the kids simply loved it and were so appreciative.

I must certainly commend her mom of being so supportive and giving me and Anaya an opportunity as wonderful as this that I will treasure lifelong:)))
